As we begin to settle into fall days, I’m always a bit nostalgic and I naturally lean towards homey recipes that fit a colder weather. I guess you cannot fight your roots! And let’s be real, there’s nothing like the cozy smell of apples cinnamon cake that warms your house up. Especially when it’s a breeze to prepare it!
If you live in the Middle East like me, but your intent is to fight summer and bring fall straight to your home, this apples cinnamon cake is the perfect autumn treat. It’s moist and tender inside with a crisp crust topped with almond flakes. It’s literally autumn knocking at your door.
Apple Cake Recipe Ingredients
- Apples: the more the merrier! They are the main ingredients, but don’t get too stressed about the type of apples you should use. Try this recipe with what you have and adapt the recipe on the type if apples you prefer, later on.
- Custer sugar: this really depends on your taste and also on the sweetness of your apples. I personally prefer desserts that aren’t that sweet, but you do you!
- Eggs: whisking the eggs with sugar for a longer time will make this apples cinnamon cake extra light and puffy.
- Butter: it will coat the apples and make the cake extra moist.
- Vanilla: in this case I used a blend of concentrated vanilla extract and vanilla bean powder.
- Cinnamon: a must ingredient for me when there are apples involved, but if you don’t like it you may add a sprinkle of nutmeg or cardamom.
- Salt: just a sprinkle.
- All-purpose flour: as much as the butter.
- Baking powder: to help the cake rising up and not getting too soggy.
- Almond Flakes & Brown Sugar: for a golden crust.

500g Apples (peeled)
150g All-purpose Flour
150g Butter (unsalted)
80g Caster Sugar
3 eggs
8g Baking powder
1 teaspoon of Vanilla Paste
Handful of Almond Flakes
Teaspoon of Brown Sugar
Cinnamon as much as needed
Directions
- Preheat the oven to 180°C
- Melt the butter and set aside.
- Peel the apples and sliced them very thin.
- Whisk eggs and sugar until the batter doubles in size. Add vanilla and cinnamon an give it a last whisk.
- Add melted butter to the apple and mix it, then add the flour and mix it well for a few seconds.
- Pour the batter into the apples and mix it gently with a spatula.
- Line a cake mold with parchment paper, but only at the bottom and grease the rest of the mold cake with butter. Sprinkle some flour where you have the butter (this will help you to remove the mold easily without ruining the cake).
- Pour the batter into the mold cake, sprinkle almonds flakes and brown sugar on top and bake for about 40 minutes.
Notes
- Let the apples cinnamon cake chill down on a baking rack to avoid a soggy bottom.
