Butter Cookies Easy Recipe

260g Unsalted Butter (room temperature)
100g Caster Sugar
1 Egg yolk
30g Milk
1.5 teaspoon of vanilla extract/paste
1 pinch of Salt
260g Flour
40g Dark Chocolate
2 Tablespoon Almonds Flakes
Directions
- Make the dough. Whisk butter with sugar and then add the egg yolk. Add milk, vanilla and salt and whisk again until well combined. Add flour until you see that it turns to a soft dough. The dough needs to be soft enough to be piped with a piping bag.
- Preheat the oven to 180°C.
- Shape your butter cookies. Transfer part of the the dough in a piping bag with a star tip. Line a baking dish with parchment paper and shape your cookies. Hold the bag vertically and squeeze to form a rose of the dimension you prefer. Leave some space between the roses, since they will grow while baking.
- Bake until slightly golden. These could keep between 13 to15 minutes, depending on your oven. Once ready remove from the oven, wait 5 minutes and let the cookies cool down on a cookie rack, before adding the chocolate and almond topping.
- Melt the chocolate in the microwave. These can be tricky so pay attention to do it with intervals of 15/20 seconds. Break the chocolate into small pieces and microwave it for 15/20 seconds, then then take the bowl out and give it a stir. Continue until the chocolate has melted completely.
- Dip half cookie inside the melted chocolate and topped with almond flakes.
- Serve only when the cookies have cooled down completely.
