- Pumpkin: in this case I used acorn squash, but butternut squash would be great as well.
- Feta: feta cheese gives the right amount of flavor to the dish, that’s why I recommend not to add any more salt to it.
- Pepper and Herbs: are spicing the dish up.
- Extra Virgin Olive Oil: always a good addition to blend flavors together.

Ingredients
1 Acorn Squash
200g/250g Feta
Mix of Fresh Herbs (rosemary, sage, thyme)
Fresh ground black pepper
Extra virgin olive oil
1 Teaspoon of Honey
Directions
- Preheat the oven to 200°C
- Wash the acorn squash, cut it in half and remove all the seeds.
- Season the squash. Cover a baking dish with parchment paper and place the sliced squash on it. On top add feta (crumbled), fresh herbs, black pepper, a teaspoon of honey and extra virgin olive oil.
- Bake for about 25 minutes, or until the squash got softened.
- Serve soon after is ready.
