I know I should start thinking about fall recipes, but when you live in the Middle East and you still have 30+ degrees in September, you can’t just ignore the fact that fall isn’t coming anytime soon. So after receiving a box of the sweetest cherry tomatoes ever, I’ve decided to make a batch of Pasta with Cherry Tomatoes, and show you how to make it in only 20 minutes.
Pasta with cherry tomatoes is probably the easiest pasta recipe you will ever make, but you should follow a few rules to make it properly. First the quality of the ingredients is key, no surprise here! Second, when cooking Italian food you should always remember that LESS IS MORE. Which means that most of the time a delicious Italian dish is made of just a few ingredients that perfectly blend together. Like in this case, where the quality of the extra virgin olive oil, the cherry tomatoes and the Parmesan makes this simple pasta recipe simply perfect.
Pasta With Cherry Tomatoes Ingredients
- Extra Virgin Olive Oil
- Garlic – Don’t slice it or squeeze it inside, because to much garlic will cover the delicate taste of your tomatoes
- Sweet Cherry Tomatoes – always choose fresh great quality tomatoes (preferably while in season)
- Basil
- Salt
- Parmesan – Try to avoid those Parmesan mix you can find in the supermarkets. My recommendation is always to buy a piece of Parmesan, so you can make sure of what you are really buying. Moreover, a whole piece of Parmesan will last longer and you just need to grate it when need it.

Ingredients
2 TBS Extra Virgin Olive Oil
1 Clove of Garlic
400g Sweet Cherry Tomatoes
Fresh Basil as much as you wish
Salt as needed
Grated Parmesan
Directions
- Make the sauce. In a large skillet sauté a clove of garlic with extra virgin olive oil, paying attention not to burn the garlic
- Chop the cherry tomatoes into small pieces and add them to the sauté. Add fresh basil to the tomatoes and cook it for 10-15 minutes over a medium fire.
- Meanwhile cook the pasta. In a large pot boil water and add salt. Wait for the water to boil again before adding the pasta. While cooking the pasta add 1/4 of the pasta’s water to the tomato sauce (this will help the pasta be creamy later when you will toss it in the skillet).
Drain the pasta 2 minutes before its “al dente” cooking time (check the package instruction for this). - Remove the garlic before adding the pasta. Add the pasta to the skillet and start tossing it with the tomato sauce for 1/2 minute. Then add grated Parmesan and a few drops of extra virgin olive oil on top and keep tossing until the oil and the Parmesan are well combined. Serve while still warm and top it with more Parmesan if you’d like.
