Have I told you that zucchini are among my favorite vegetables?! If not I guess you’ve figured that out, since I’m all about zucchini on my Instagram account lately. Well, this is one of the advantages of living in a warm place like Israel: a long zucchini season that has started already! So if you are a zucchini fan like me you should try these grilled zucchini and feta skewers today! This is the simplest of appetizers, yet so so delicious! If you are searching for a light dinner idea, a vegetarian appetizer for a lunch with friends, or a new idea to spice up your happy hour, these vegetarian skewers are perfect for you!
Grilled Zucchini and Feta Skewers Ingredients
- Feta, Haloumi or Kash Cheese
- Zucchini
- Parsley
- Honey
- Lemon
- Salt
- Pepper
- Extra Virgin Olive Oil
Grilled Zucchini and Feta Spiedini (Skewers) with Honey & Lemon Sauce

300g Feta, in alternative Haloumi or Kash Cheese
4-5 Zucchini
1 Tablespoon Parsley
1 Teaspoon Honey
1 Teaspoon Lemon Juice (or more, this depends on your taste)
2 Tablespoons of Extra Virgin Olive Oil
A pinch Salt
Pepper
Directions
- Cut zucchini halves lengthwise into thin slices. Using a pan, grill each slice over high heat until grill-marked (no oil needed here). Set aside to chill down.
- Assemble your Skewers. Cut cheese into cubes (I used Feta). Roll 1 or 2 zucchini slices around each cheese cubes, then thread each one of them onto skewers.
- Prepare lemon honey sauce mixing oil, salt, pepper, honey, lemon and chopped parsley. Mix it until well combined.
- Serve. You can serve these grilled zucchini and feta skewers cold or warm.
For cold zucchini and feta skewers: just add the sauce on top right before serving, when the skewers are cold.
While, if you want to try a different version you can grill the zucchini and feta skewers on a pan and serve them warm. In this case you will add the lemon honey sauce before serving. Both ways are delicious.
