Ingredients

  • 7.8 oz (220 g) all-purpose flour

  • 2½ teaspoons baking powder (10 g)

  • 4 tablespoons white sugar, approximately 1.8 oz (50 g)

  • 1 tablespoon brown sugar or cane sugar, approximately 0.4 oz (12 g)

  • 5.3 oz (150 g) unsalted butter, melted

  • 5.3 oz (150 g) dark chocolate, roughly chopped—plus more if you’d like

  • 1 medium egg

  • A pinch of baking soda

Directions

  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the flour, baking powder, baking soda, white sugar, and brown or cane suga. Mix the ingredients.
  • Add the melted butter and egg. Mix until the ingredients are well combined.
  • Fold in the chopped dark chocolate. The dough will be very soft and almost wet—don’t worry, that is exactly how it should look.
  • Let the dough rest for five minutes. You can place it in the fridge for those 5 minutes, if your room is warm.
  • Take small portions of dough and gently roll them into balls with your hands. Place them on the prepared baking sheet, leaving a little space between each one, and press them down slightly.
  • Bake for approximately 10-13 minutes, or until the cookies are lightly golden around the edges.
  • Transfer the cookies to a cooling rack and wait until they cool before tasting them—if you can. I usually consider this step more of a suggestion than a rule 🙂
